Garlic-Soy Cucumber Salad

A refreshing cucumber salad with a savory garlic-soy dressing, a hint of sweetness, and a touch of sesame. Light, crisp, and full of flavor — perfect as a side dish or appetizer.

Ingredients

  • 1 large English cucumber (or 2 smaller cucumbers), thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar or mild vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, finely minced or grated
  • 1 green onion, thinly sliced
  • 1 teaspoon toasted sesame seeds
  • Salt and black pepper to taste

Instructions

  1. Place the sliced cucumber in a mixing bowl.
  2. In a separate small bowl, stir together soy sauce, vinegar, sesame oil, sugar, and garlic until the sugar dissolves.
  3. Pour the dressing over the cucumber and toss gently to coat.
  4. Add the green onion and sesame seeds, then toss again.
  5. Season lightly with salt and black pepper, adjusting to taste.
  6. Let it rest for 5–10 minutes before serving to allow the flavors to develop.

Tip: For extra flavor, chill the salad before serving and use freshly toasted sesame seeds.
